Mousse of Chocolate From
Chef Joi Aikens my niece!
Ingredients
11 oz semi sweet chocolate
9 egg whites
5 egg yolks
1 Stick of butter
8 oz cream
1 Cup of sugar
Method
Melt chocolate over double boiler and melt butter in chocolate
Once melted, add egg yolks one at a time, whisking until fully incorporated
Beat egg whites with sugar until soft peaks are formed, and fold into chocolate
Beat cream until stiff peaks are formed and fold into chocolate mixture. Chill and
serve!
