3 Dishes I LOVE!

Mac-N-Cheese..Plus
Ingredients
8 ounces macaroni cooked according to package  directions
1 / 2 cup of cheese (remember use your favorite cheeses) I love cheddar, jack and Aaiago
1 / 2 tablespoon butter
1 / 2 table spoon oil
1 / 2 medium onion diced
1 / 2 cup chopped Shitake or your favorite mushroom
1 egg plus 1 egg white
1 / 4 teaspoon flour
1 / 2 cup fat free milk or yogurt non-sweet plan
1 teaspoon herb season blend (such as dry sage, thyme, dill, low sodium salt and pepper)

Method
Sautee onions (use not stick pan ) as little of your butter as possible, until they start to brown
Add mushrooms a bit more, butter plus a bit of oil, sauté until mushrooms are soft.
In mixing bowl wick eggs add milk, flour and herb season blend. Wisk well.
In muffin pan or baking dish (I like to use small pie pans great for portion control) oil pan with remaining oil, and butter add layer of mac, next sautéed mushrooms, the cheese (be sure the top layer is cheese) pour whisk egg mixture over the mac-N-cheese.
Bake in 350 oven until cheese melts about 25 to 30 minutes.

Meat Muffins
I use the muffin it helps with portion awareness of course you can hand roll yours into meat balls, they still taste quite nice.
 
Ingredients
1 pound ground meat, turkey, beef, pork or chicken. (I used a blend 1 / 4 pork 3 / 4 turkey)
2 tablespoon oil
1 / 2 sweet onion diced fine
1 / 2 yellow bell pepper diced fine
2 cloves garlic diced fine
1 / 4 pound mushrooms diced fine
1 / 4 teaspoon ground black pepper
1 / 4 teaspoon Herb-du Provence
Method
Place ground meet in mixing bowl set a side
Heat oil in sauté pan add onions sautéed 3 to 5 minutes, add peppers cook three minutes, add mushrooms stir in , place lid over pan and cook until mushrooms have soften about 5 to 7 minutes, remove  sautéed about 2 more minutes or you can strain off excess liquid.
To mixing bowl (ground meat) add sautéed vegetables, plus seasoning. Mix well.
Place in oiled or nonstick muffin pan and bake 20 to 30 minutes at 375.
Serve and enjoy.
 
 
Ranch (yogurt) Dressing
1 and 1 / 2 cup plain yogurt
1 / 4 cup nonfat butter milk
2 tablespoons garlic minced
2 tablespoons dill chopped fine
2 tablespoons parsley chopped fine
1 tablespoon chopped chives chopped fine
1 / 2 onion chopped fine
1 / 4 teaspoon black pepper
Method
To mixing bowl add yogurt and buttermilk mix well.
Add herbs and onions mix  your dressing is ready.
