BBQ for none Meat Eaters

Grilled Vegetables
Ingredients
Any veggies you love!
1 large Eggplant sliced
1 each red, Yellow and green Bell pepper, seeded and sliced into large pieces
1 / 2 cup orange juice Fresh
1 / 4 cup soy sauce
2 tablespoon oil
Method
Place all ingredients in large container and allow to marinate for at least 1 hour.
Place on hot bbq, grill for 3 minutes on each side turning about 3 times or until vegetable are nice and tender.
BBQ Sauce
1 cup catsup
2 tablespoons spicy mustard
½ cup worcestershire sauce
½ cup apple cider vinegar
2 tablespoons juice of whole lemon
2 tablespoons of sugar
½ cup water
1 diced onion
Cayenne pepper tt
Add all ingredients to a saucepan and bring to a boil then reduce to a simmer and allow to
thicken while stirring constantly.
