BEAUJOLAIS DIJON PASTA SAUCE
- 2-3T Olive Oil
- 1 onion, diced
- 1 red pepper, seeded and chopped
- 1 green pepper, seeded and chopped
- 2T Dijon mustard
- 1 bottle Beaujolais (1/4 cup for sauce)
- 1lb. cooked penne pasta
Sauté vegetables in oil, add other ingredients. Serve over pasta.
