Fresh Pickled Melons
Sweet, Tart – Delicious!
Melons
– 1 Cantalope
– 1 Honeydew
– 1 Watermelon (small)
1/4 C. Vinegar
2 TBSP Sugar
1/4 C. White Wine
1 Tsp. each; fresh dill, tarragon
and mint – all finely chopped
Cube Melons into bite size pieces set aside.
In a large bowl combine wine and vinegar. Add sugar
and herbs. Mix untl the sugar is completely disolved.
Add in the melon pieces; turn to coat well with herb
and vinegar mixture.
Chill until ready to serve!
