Curry powder is simply a blend of spices, and it’s easy to make your own. After preparing this dish, if you find it a bit too hot, next time cut back on the cayenne. Tame the heat in this dish, add a bit of sugar or honey.

To make the curry powder, combine the cumin seeds, salt, mustard, turmeric, coriander, and cayenne. Grind this mixture together in a coffee grinder.
Heat the butter in a pan and add all the curry powder, stirring to blend. Add the potatoes, carrots, and onion, cover, and cook until the vegetables are tender, about 10 to 15 minutes. Add the yogurt and peas and asparagus to the pan an stir until all the vegetables are coated with the yogurt and thoroughly heated. Serve over rice
